Roasted Veggie Deliciousness

Ingredients
1 cup kale, chopped1 cup mushrooms (sliced, you can use whole)2 medium carrots, chopped1 medium zucchini, cut into half moons1 broccoli head2 T olive oil 2 t minced garlic2 t grated gingersalt & pepper to taste
Directions
NB: the current caloric info assumes 4 T of olive oil instead of 2- I was definitely way too liberal when I made these today!

Mix everything together (except the salt).

Spread veggies out in a single layer on baking sheet.

Bake at 350 for about 20-25 minutes (cook time depends on how big you chop the veggies).

If you want, broil them for a couple minutes to brown them up a bit.

Remove from oven & toss with salt to taste.

Enjoy!


Other suggestions/variations:

Add fresh herbs after you pull these out of the oven.

Use these for sandwiches, pasta, quiche, etc. They're really versatile!
