Fresh Chicken Taco

Chicken breast, one per personSoft Corn Tortilla, one per personLettuce or Mixed Green salad, one cup per personJuice of two LimesSweet Red Onion, 3 tbsp (to taste)One medium tomato (diced)Fresh Cilantro, 3 tbsp (to taste)Garlic powder, 1tsp
Makes one taco. May easily be expanded by cooking one chicken breast per person, and allowing one soft corn tortilla for each.
Chop Onion and dice tomato, sprinkle with a little garlic powder and Chili powder. Set aside.
Cut chicken breast into strips or pieces using kitchen shears. Squeeze out the juice of one lime into a frying pan. Heat to Medium, add chicken. Cook for approximately 10 minutes, or until chicken is done through. Add water to lime juice if the pan is starting to dry. While chicken is cooking, sprinkle it with Chili powder.
Heat soft corn tortilla in oven, careful not to let it dry out. I do not recommend microwaving because the corn can become soggy, then over-dry. If cooking for a party, you can heat a stack of them in the oven at once, taking them out when the dish is ready to serve.
Once chicken is done and the tortillas are heated, assemble taco. Snip fresh cilantro over the top. Always put cilantro on the taco last so it doesn't wilt. Squeeze fresh lime over the top.
Other serving suggestions:
If you're having a party, its fun to put all of the ingredients out on a platter and allow your guests to make their own tacos. Place the chicken in a bowl at the center, and surround with lots of fresh veggies and lettuce. You could even marinade the chicken in lime and chili powder ahead of time and grill it outside for a nice cookout. Al
