Low fat Red Pepper Bisque

Ingredients
1 T Olive Oil1 large onion, chopped3 cloves garlic, chopped5 red peppers, seeded and chopped1 quart organic chicken broth3 bay leaves1tsp thyme1T salt1 tsp pepper
Directions
Sautee onion, garlic & peppers in olive oil until tender. Add chicken broth and simmer on low for 45 mins. Using a blender, carefully blend soup until creamy.
