Ingredients
tortillasshredded porkcheeseonionsenchilada sauce
Directions
put pork roast in crock pot with a can of green chilis. cook for 8 hours.
Shred pork with a fork, put in tortillas with enchilada sauce onions and cheese.
Place some enchilada sauce in the bottom of 9x13x2 pan
Roll up tortillas and place in pan. Top with enchilada sauce,cheese and left over meat.
Cook at 350 for 20 minutes or until tips of tortillas are firm.

    Made this tonight. I already hade the pulled pork frozen in the freezer. Added a 1/4 cup kernel corn, scallions, black beans and a 1/4 cup of lite sour cream. Very yummy. Next time I will use chicken and jalapeno peppers extra spice. - 1/6/08
