Turkey Bacon & Cheese Frittata

Ingredients
Best Choice® Extra Virgin Olive Oil Pan Coat-no stick cooking spray2 slices Jennie-O Extra Lean 95% Fat Free Turkey Bacon, chopped2 Large Eggs, fresh5 Egg whites2 cups fresh Spinach½ cup chopped Green Bell Peppers½ cup Sweet red bell peppers½ cup Sliced Onion2 cloves Garlic, chopped¼ cup Kraft Shredded 2% Mexican Four Cheese blend2 tsp Olive Oil, Extra Virgin1 tsp Thyme, fresh
Directions
1) Coat an 8-inch skillet with no stick cooking spray; add the Evoo.
2) Over medium heat sauté the chopped turkey bacon for a couple of minutes.
3) While the bacon is sautéing, in a medium bowl, whisk the eggs, egg whites, salt, pepper and thyme. Add the bell peppers, onion and chopped garlic. Fold in the spinach.
4) Add the egg mixture to the bacon. Sprinkle the cheese on top and bake in preheated 350°F oven for 20 minutes or until bubbly and lightly browned.
5) Remove from oven, divide into two portions and serve.
Serves two.
