Black Bean & Butternut Squash Taco

Ingredients
1 cup black beans1 cup diced butternut squash2 T EVOOsalt & pepper to tasteCinnamonCuminTortillaSour cream & sliced green onions to top
Directions
Add diced squash to EVOO, saute 10-15 mins until soft. Add black beans, heat through. Add seasoning
and saute until cooked through
Heat tortilla in foil until soft
Divide mix between 8 tortillas, top with sour cream & sliced green onion, roll & enjoy!
