Rice Pilau

Ingredients
Basmati Rice - 1.5 cupsExtra Virgin Olive Oil - 2 tbspCumin Seeds - 1 tbspSalt - .5 tbspCayenne Pepper - .75 tbspTurmeric Powder - 1 tbspMixed Frozen Vegetables - 2 cupsWater - 3 cups
Directions
- Wash and soak rice
- Thaw frozen vegetables
- Heat pot and add olive oil and cumin seeds
- Once cumin seeds have turned deep brown, add thawed vegetables and stiry fry for several minutes
- Drain soaked rice and add to pot
- Add in remaining spices and stir briefly to mix
- Add in 3cups water and turn heat to medium / medium low
- Cover pot and cook until rice is cooked
- Cover pot
