Ham, Cheese, Mushroom, Pepper Omelet

6 large eggs4 slices 4% lean low sodium ham, diced2.5 oz extra sharp cheddar cheese, diced1 can mushroom stems and pieces3-4 Tablespoons diced green chiles2-3 Tablespoons grapeseed oil2-3 Tablespoons waterSalsa to tasteOptional: Can add diced onions for extra flavor or diced green onions for color.
Heat large cast iron skillet with grapeseed oil.
Beat eggs with water, ham, and chiles. Pour mixture into hot skillet. Sprinkle mushrooms evenly on top. Scatter diced cheese on top of all.
Cover pan and cook on low heat until top is set and cheese melted.
Can add chopped onions for extra flavor. Or top with diced green onions.
Makes four generous servings (pie shaped - about 4 inches)
