5 minute no-sugar added/low-fat chocolate cake

Ingredients
4 T all-purpose flour3 T Splenda2 T cocoa powder1 egg3 T water 1 jar of babyfood prunes 1 T cup semi-sweet chocolate chips (optional)
Directions
In a large coffee mug or soup mug, mix the first three ingredients. In another bowl or mug, mix the next three ingredients until they are well blended. Pour the wet ingredients into the dry, stir just long enough to mix well. Stir in chocolate chips.


Microwave in mug/soup mug on high for 3-5 minutes, depending on how fast your microwave cooks. Cake is done when a toothpick inserted into the middle still has just a little bit of cake clinging to it. Let mug cool a couple of minutes, then flip out onto a plate to serve. It won't win any beauty contests, and the texture is a little chewy, but it sure does taste good when you haven't had chocolate cake in awhile.


Makes two moderately sized servings, or one really big one.


*Note: I like my chocolate a little on the bitter side, so I used just 3 Tbsp of Splenda. If you like yours sweeter, use more.

    It's basically pureed prunes - baby food is easy to find. I used a jar of Beech Nut Stage 1 prunes, 2.5 oz. size.
