Baked Penne

Ingredients
1 lb Penne or pasta of choice1 lb mushrooms, fresh3 tbsp butter1 lb 93% lean ground beef28 oz diced tomatoes (juice included)1 can tomato paste1 onion, large, diceditalian seasoning, to tastered pepper flakes, to taste2-5 bay leaves, to taste1 lb mozzarella cheese1/2 cup parmesean cheese
Directions
Cook penne for 3 minutes, reserve

Saute mushrooms in butter, reserve

Saute beef with onions until done, add mushrooms, and tomatoes, paste, italian seasoning, red pepper flakes, and bay leaves. Let simmer for 30 min to 1 hour, tasting and adjusting as needed

Combine sauce with penne, add 1/2 mozzarella cheese

Place in 9x13 pan, top with remaining cheeses

Bake in 350 degree oven for approx 30 min, or until bubbly...
