Classic Hollandaise

Ingredients
1 tbsp water2 egg yolksdash saltdash lemon juice1/2 c butter
Directions
Combine water, salt, lemon juice and egg yolks in bowl that has been placed on top of a not quite simmering pot of water. (Do not use much water, maybe an inch or so deep). Whisk constantly while very carefully drizzling melted butter into yolks. Continue until a light yellow sauce forms. Use all of the butter.

Makes 6 servings.
