Beef Chimichangas Filling

Ingredients
2 lb lean cup beef, cubed 2 medium potatoes, peeled and diced 8 oz can hot green chilies, chopped1 large onion, diced4 cloves garlic, minced2 tsp salt1/2 tsp cumin (optional)2 1/2 cups beef stock or water
Directions
Place all ingredients into a medium stock pot and bring to boil. Cover and reduce heat, simmering for 1 hour. Remove lid and simmer uncovered until meat is tender and mixture is thick (about 2 hours). Spoon filling into warm flour tortillas and top with shredded cheese and condiments of your choice.
