Italian Spinach and Squash Soup

Ingredients
1 TBL Smart Balance Buttery Spread1 tsp Italian SeasoningSalt and Pepper to taste2 tsp chopped garlic2 cups low sodium chicken broth14.5oz can Squash with Vidalia Onions4 cups Fresh Spinach 4 tsp grated Parmesan cheese
Directions
In medium sized pot, melt butter spread and add garlic. Cook gently for 2 minutes then add Italian seasonings, salt and pepper.
Add chicken broth and bring to a boil.
Add canned squash, return to boil.
Add spinach and slowly cook over medium low heat til wilted. About 10 minutes.
Puree with a hand blender.
Top each serving with 1tsp grated cheese
