Parmesan Coated Sweet Potato Fries

Ingredients
1/8 cup all purpose flour1/4 teaspoon salt1/8 teaspoon black pepper1/3 cup grate Parmesan cheese1 small sweet potato (about 8 oz - scrubbed and cut into 8 pcs lengthwise)
Directions
1. Preheat oven to 425. Line a baking sheet with foil and set aside.

2. In a shallow bowl, stir together the flour, salt, and pepper. In a separate shallow bowl, lightly beat the egg white with 1 Tablespoon water until combined. Place the Parmesan cheese in another shallow bowl.

3. Dip the sweet potato first in the flour mixture, shaking off the excess. Then dip each wedge into the egg white mixture until coated. Finally, dip the sweet potato in the Parmesan, coating completely. Transfer potato wedges onto the prepared baking sheet as you go.

4. Bake until tender and crisp, abt 20-25 minutes. Serve sprinkled with more salt and pepper if desired.
