12 oz (3/4 pound) extra lean ground beef1 pound dried kidney beans46 oz tomato juice without salt added1 cup chopped onion3 tsp garlic powder3 tbsp chili powder
Start the day before to soak the beans or use the quick soak method. Rinse. Put the beans in several cups of water and boil until tender. This can take 2-4 hours depending on how tender you want your beans.
Fry the hamburger with the onion in a dutch oven. Drain. Add the garlic, beans, tomato juice and chili powder. Bring to a boil, reduce heat and simmer about an hour. Makes 8 decent servings.
Note: A trick I use with dried beans to help de-gas the beans: Soak as usual. Rinse. Cover the beans with water and a pinch of baking soda. Bring to a boil. Let boil about 30 minutes. Drain and rinse. Add fresh water. Bring to a boil, reduce and simmer until tender.
