Festive Black Bean Salad

Ingredients
2 tbsp cider vinegar1 tbsp extra virgin olive oil2 cloves garlic, minced1 tsp ground cumin1 tbsp honey1/4 tsp salt1/4 tsp ceyenne pepper or more1-2 cans black beans rinsed and drained1 can niblet corn, drained1 red bell pepper or mixture or red and green1/2 red onion or 1/2 cup chopped green onions1/2 cup chopped cilantro or parsley
Directions
Serves 10. Whisk together vinegar, oil, minced garlic, ground cumin, honey, salt and pepper. Combine the salad ingredients in a large bowl. Toss with the dressing to coat. Cover and chill for at least 1 hour before serving to let flavors develop. If sensitive to raw onions, soak onions in dressing for 30 minutes before adding to the rest of the ingredients.
