Vegetarian Chicken and Rice Soup

* Uncle Ben's Whole Grain Brown Rice, 2 serving * Kroger Frozen Gumbo Mix, 2 serving * Morningstar Farms Chicken Strips meal starter, 1 serving, 12 average pieces, 2.5 serving * Red Ripe Tomatoes, 2 cup, chopped or sliced * Yellow Sweet Corn, Canned, 1 can (12 oz) yields * Vegetable Broth, 4 cup
Makes 4, 1.5 cup Servings (estimate)
Start by cooking rice according to box instructions. I like to cook mine by the instructions listed as "Cook like Pasta". In a large and deep skillet add chicken strips (cut in half or thirds) and 1cup water. After about 5 minutes add all remaining ingredients to skillet. Let simmer for 15 minutes.
After rice is cooked (and drained if "cooking like pasta") add everything from skillet to rice and add vegetable broth. Let simmer for a few minutes.
Goes great with Garlic Triscuits or whole wheat toast with a tsp of Smart Balance Butter.
Variant: try adding peas or diced and cooked potatoes. This recipe is a versatile recipe that can be modified to anyone's tastes.
Try adding: Mushrooms, peppers, peas, potatoes, or any ingredient you see fit.
