Ingredients
chicken breast (no skin, no bone), carrot, eggplant and pepper, olive oil.
Directions
cut the chicken breast into cube. cut the carrot into thin slices, the pepper into slices and the eggplant into cube. put chicken in a non stick pan. add the veggies and a teaspoon of olive oil. cook until the chicken is done. before serving add a bit of salt if you want to.

makes 1 serving. can be served with any salad.
