Coconut flour Pancakes

4 TB melted land-0-lakes light butter4 TB fat free 1/2 & 1/22 tsp Splenda1/2 tsp vanilla extract1/4 C eggbeaters or 4 eggs4 TB Coconut Flour1/2 tsp Baking Powdermay add dash of salt if desired
Mix liquid ingredients together,
mix dry ingredients together and add the wet to the dry and blend well.
Heat griddle or fry pan spray with cooking spray.
drop spoonfulls onto hot pan and cook as you do normal pancakes. Serve hot with choice of syrups jelly or fruit.

CRAZEEEBECKY
I, being new to gluten free cooking, made a boo boo. I followed the recipe, but like Dotlarson & 2catsperson, I was a little confused by the recipe. I ended up making TB tablespoon and put in 1/4c eggbeaters. Apparently it should have been 1 1/4 c eggbeaters or 4 eggs. I will make them again! - 2/25/12
