Creamed Potatoes with skins

Ingredients
4-5 Large Red Potatoes1/2 cup - Valdalia Onion 1 cup - Cheddar Cheese, shredded1/2 cup - Sour Cream1/4 cup - 2% Milk1/2 cup - unsalted Butter1 Tsp - Salt1/4 Tsp - Pepper
Directions
Wash 4-5 Large Red Potatoes and cut out any eyes that are on the skin. Cut up into small pieces and boil in water covering them until tender. Dice 1/2 cup of a Valdalia Onion and put it in the pot with the boiling potatoes. In a mixing bowl put 1/2 cup of Sour Cream, 1/2 cup of butter, 1 cup of shredded Cheddar Cheese, 1 Tsp of Salt, 1/4 Tsp of Pepper. Drain your potatoes and onion and pour into the mixing bowl. Mix at a low speed until the cut up Potatoes begin to smooth out. Add 1/4 cup of milk and mix until the milk is incorporated. Transfer Creamed Potatoes to a serving dish and serve. Can be reheated later for another meal during the week.
