Thai chicken with Tomatoes

Ingredients
2 - lg. chicken breasts, skinless, boneless1 large onion 6 cloves garlic1 slice fresh ginger root1 T. olive oil1 t. termeric2 t. ground cumin1 t. salt1 t. gr. black pepper1/2 t. ground cardamom1 (1 inch ormore0 cinnamon stick, chopped1/4 t. ground cloves2 bay leaves1/4 t. ground nutmeg1 (14.5 oz.) can whole peeled tomatoes, crushed
Directions
Place onion, garlic & ginger in food processor and proces until a paste. Heat oil in a large skillet over medium hat, add onion paste and saute', stirring constantly for about 10 min.

Stir in the spices, saute 1-2 min. Place chicken pieces in skillet and stir them around in spice mixture until well coated. Saute for another 4 min. Add tomatoes, with liquid and stir. Reduce heat to low and simmer for 1-2 hrs. or until the oil has separated from the liquid. Stir occasionally. (Note If you simmer uncovered, the sauce will thicken; add water or keep covered while simmering) This would work in a crockpot, also.
