Vegtable & Corn Chowder

Ingredients
1 tbsp. vegtable oil1 red onion1 red bell pepper, diced3 garlic cloves, crushed1 large potato, diced2 tbsp - flour2.5 cups of milk2 cups vegtable stock2 oz broccoli florets3 cups canned corn, drained1 cup cheesesalt n pepper to tase1 tbsp chopped cilantro, to garnish
Directions
1.Heat the oil in a large saucepan. Add the onion, bell pepper, garlic and potaote and saute ove a low heat, stirring frequently, for 2-3 minutes.

2.Stir in the flour and cook, stirring for 30 seconds or so. Gradually stir in the milk and stock.

3.Add the broccoli and corn. Bring the mixture to the boil, stirring constantly, then reduce the heat and simmer for about 20 minutes, or until all the vegtables are tender.

4. Stir in cup of cheese until it melts.

5. season and garnish and enjoy!
