Crispy Quinoa Cookies (Wheat Free)

* Honey, 0.5 cup * Brown Sugar, 0.33 cup, packed * Margarine, hard, 1 stick * Peanut Butter, smooth style, 0.5 cup * Vanilla Extract, 0.5 tbsp * Rice flour, white, 1 cup * *Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 0.33 cup * Baking Soda, 1 tsp * Salt, 0.25 tbsp
Heat oven to 350 degrees, beat honey, brown sugar, margarine, peanut butter and vanilla in medium bowl until creamy. Combine rice flour, quinoa flakes, baking soda and salt in small bowl. Add to mixture and beat until well blended. if desired add nuts. Drop by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 12-15 minutes or until light golden brown. Cool 1 minute before removing from cookie sheet. Yields about 3 dozen cookies.
