Banana Brazil Nut Energy Bars (vegan)

Ingredients
7 Medjool dates (about 3/4 cup chopped)1/4 cup Brazil Nuts1/4 Raw Cashews1 banana 2 Tbsp Maca Root Powder, optional1/2 tsp Vanilla Extract1/2 teaspoon cinnamon, ground1/4 cup shredded Coconut, to coat bars.
Directions
Put all ingredients except for the coconut into a food processor. Process until the mixture is smooth.

Divide the mixture into 12 bars or balls. They will be considerably smaller than store bought energy bars. Roll or press into the coconut.
TIP: I usually dump the whole mixture out onto some wax paper and then shape it into a brick to throw in the freezer for an hour or so. This makes it easier to work with.

These tend to be really soft at room temperature so try keeping them in the freezer and pulling them out before a long run or ride.

Also, I like the maca because it has a malty flavor and is a good restorative food for endurance athletes. It can be expensive though; leaving it out won't make too much of a difference.
