Bran Flakes Cereal, 2 cup Milk, nonfat, .5 cup4 overripe bananas, mashedCinnamon, ground, 1.5 tspGinger, ground, .5 tspAllspice, .5 tsp Egg, fresh, 1 largeHoney, 1/3 cup Canola Oil, 1/4 cup Baking Powder, 1 tspBaking Soda, .5 tsp Whole Wheat Flour, 1 cupWheat flour, white, all-purpose 1 cupSalt, 1 tsp
Heat oven to 375 and spray 2 large pie tins. Soak the cereal in the milk for 5-10 minutes in the bowl of your mixer, then add all wet ingredients to mix for 2 minutes. Meanwhile sift dry ingredients together and incorporate. Divide batter in pie tins and bake for 25 minutes. Makes 16 servings, so I usually freeze one and cut up the other. Optional toppings choices (not in calculations) are warm maple syrup, butter with cinnamon sugar, a drizzle of honey, brown sugar and pecan topping melted in during baking, etc.....
