500 grams lean ground beef1 small onion, chopped1 apple, peeled and chopped (Granny Smith are best)2 slices of white bread soaked in 1/2 cup milk (I used non-fat. Tastes good with white bread - will try next time with multi-grain bread) 2 tsp curry powder2 Tbsp fruit chutney 1/4 c currants (I have substituted raisins, and it tastes good)2 Tbsp lemon juicesalt and pepper1 bay or lemon leaves1 egg 1/2c milk (I use nonfat)
Preheat oven to 170 degrees. Grease 4-cup baking/casserole dish.
Brown the beef. Remove to a plate, add onion and fry for 5 mins until soft.
Add chopped apple. Squeeze out excess milk from bread and add to frying pan with browned beef, tearing the bread to mix in with meat.
Add curry powder, chutney, currants and lemon juice. Mix well and season.
Put mixture into baking dish and cook 30 min.
Take out. Mix egg and milk together for topping and pour over meat. Bake a further 15 mins.
Serve wiht rice or couscous and extra chutney.
