Mashed Potatoes with Caramelized Onions

3 Tablespoons Olive Oil3 Large Red Onions - Thinly Sliced2 Teaspoons Salt5 Medium Baking Potatoes - Peeled and Cut into 1 inch Peices1/3 Cup Milk1/8 Teaspoon black pepper
1. In 12 inch skillet, heat oil over medium heat. Add onions and 1/4 teaspoon salt. Cook, stirring occasionally, until very tender and deep golden brown, about 30 minutes.
2. Meanwhile, in 4 quart saucepan, combine potatoes, enough water to cover and 1 teaspoon salt. Heat to boiling over high heat. Reduce heat; cover and simmer until tender - about 15 minutes. Drain.
3. Return potatoes to saucepan. Coarsely mash potatoes with milk, remaining 3/4 teaspoon salt and pepper. Stir in all but 2 tablespoons caramelized onions; heat through. Top with remaining caramelized onions.
