Ingredients
2.5 lb tri tip roast1/2 cup beef broth1/3 cup reduced sodium soy sauce, lite8 sweetener packets1 tsp ground ginger2 cloves garlic
Directions
makes 8 servings

1. Brown tri tip in olive oil until browned on all sides. About 8-10 minutes.
2. Meanwhile combine broth, soy sauce, sweetener, ginger and garlic
3. Place tri tip in crockpot
4. Pour liquids over roast and cook in slow cooker high 4-6 hours or low 8-10 hours.
5. Slice and serve.

    This was my first time cooking a tri tip in the crock pot and I was amazed how tender and delicious it was. It fell apart like a pot roast. I didn't have the low sodium soy sauce so I used regular soy sauce and watered it down a bit. What a great meal for a cold drizzly evening. Will make again! - 10/23/12
