Ingredients
1 cup chopped onions1/2-1 cup chopped bell peppers1 clove shopped garlic1 Tablespoon extra virgin olive oil1 can(or cup of fresh chopped) tomatoessliced mushrooms optional
Directions
Saute chopped onions, bell peppers, mushrooms and garlic in olive oil. Add diced tomatoes and salt and pepper to tast. Simmer until bubbling. Makes approximately 4 1/2 cup servings.
