Directions
Put olive oil in a wok and heat it up. Add with this order : onions, peppers,eggplant,zucchini and bamboo roots. Add salt to taste. Keep stirring for couple of minutes until the vegetables are tender. Boil the egg noodles separately and when done, add them in the wok with the vegetables.

    First time I cooked eggplant. There are no directions, so I do not know if it came out the way it should have. The eggplant did taste good with these ingredients - 3/19/07
