Turkey Ham and Bean Soup

1/4 c. celery, chopped1/4 c. onion, chopped2 garlic cloves, minced4 T. fresh parsley, minced1 T. olive oil1 lb Great Northern beans4 c. water4 c. low sodium chicken broth1/2 c. cubed Turkey Ham
Put dry beans in large pot, cover with water and bring to boil. Boil for 2 minutes then cover with tight-fitting lid and remove from heat. Let cool for 1 hour.
Meanwhile, lightly saute chopped celery and onion in olive oil till soft. Add minced garlic and parsley and cook for 1 minute more. Add to crockpot.
Drain beans (discard water) and add to crockpot with 4 cups fresh water, broth and cubed ham.
Cook on low for 8 hours or high for 6 hours.
Serves 8.
