1 cup arborio rice, 2 tbsp butter, 1/4 of medium onion, 1 clove garlic, 1/8 cup parmesean cheese, 3 1/2 cups chicken stock
heat 3.5 cups of vegetable or chicken stock and keep warm. In a large saucepan saute 1/8 cup of onion and one clove minced garlic in 1tbsp of butter over medium heat for about three minutes.
Add one cup of rice and salt and pepper to taste. Stir constantly for 1 or 2 minutes without browning. Using a ladle, pour hot stock one ladel at a time, stirring constantly. Wait until all liquid is absorbed before adding next ladle. Remove from hear, stir in 1/4 cup of parmesean grated chees and 1 tbsp butter
