Ambrosia Mold

8 oz. crushed pineapple, in juice, drained2 cups boiling water1 pkg. (8serving size) sugar free Orange Jello1 cup Cool Whip Lite11 oz. can mardarin oranges, drained2/3 cup miniature marshamallows1/2 cup shredded coconut
Drain pineapple, reserving juice. Add cold water to make 1 cup.
Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Stir in measured pineapple juice and water. Refrigerate about 1 hour until consistency of unbeaten egg whites.
Stir in whipped topping with wire whisk until smooth. Refrigerate 10 minutes or until mixture will mound. Stire in pineapple, oranges, marshmallows and coconut. Spoon into mold.
Refrigerate 3 hours or until firm.
Serves 12.
Note: I like to mold this into individual molds rather than 1 large one.
