Creamy Broccoli Soup

• 1/2 cup couscous• 4 cups broccoli, chopped• 5 cups water or vegetable broth• 1 onion, chopped• 2 cloves garlic, minced• 2 tbsp butter• 1 1/2 tsp salt• 1/4 tsp rosemary• 1 tbsp nutritional yeast (optional)• 1 tbsp lemon juice• grated parmesan cheese
In a large pot, combine the water or vegetable broth, broccoli and couscous. Bring to a boil, reduce heat then simmer uncovered for 15 minutes or until the broccoli is soft. Add salt, rosemary, nutritional yeast and lemon juice. Puree in blender or food processor.Return to stove and simmer for 5 more minutes. Serve with grated Parmesan cheese.
