SD: Caribbean Crock Pot Beans

1 lb. dried pink beans (or chili beans, or cranberry beans, etc.); rinsed and soaked overnightWater (to cover)2 plantains, chopped1.5 c. chopped tomato3 diced green bell peppers1 chopped onion3-5 cloves garlic, pressed
Soak beans overnight.
Drain & place in slow cooker-- covering with up to 2" of water. Cover and cook on low for about 7 hours.
30 min before you want to serve, stir in the plantain, tomato, bell pepper, onion, and garlic. Raise heat to high, cover and cook for 30 min or so until plantain has softened.
