Easy Rice Pudding

2 1/4 cups arborio rice2 1/4 cups non fat milk1 cup water1 tsp salt1/4 cup vanilla sugar (or 1/4 cup granulated sugar plus 1 tsp vanilla)3/4 cup raisins
In a medium saucepan, combine the rice, water and salt. Bring to a boil and cook for 5 minutes on a simmer, stirring frequently.
Meanwhile, in a separate medium saucepan, combine the milk and sugar over medium heat. Bring the milk/sugar to a simmer.
When the rice has absorbed most of the water, spoon the rice into the pan of milk and sugar and continue cooking. Keep the pan on a medium heat and stir, tasting for doneness after about 20 minutes. If the rice still has a bit of a 'bite', add HOT water (a 1/4 cup at the most) to the pan.
Add raisins and any spice you may choose and serve piping hot or ice cold, depending on your liking.
Using arborio rice adds a creamy texture you don't get with regular rice.
