Sweet Rice(Arroz Dulce)

Ingredients
1 cup medium grain rice(1 taza arroz grano mediano)6 cups coconut milk(6 tazas de leche coco)1 cup sugar(1 taza azucar)1 slice ginger root, crushed(l pedazo gengibre machacado)6 cinammon sticks(6 canela en rajas)1 cup raisins(1 taza de pasas)2 tsp salt(2cdtas.sal)
Directions
1) In a bowl, put rice in water for an hour or two.(En un envase, ponga el arroz en agua por una hora o dos)
2) In a saucepan, put to a boil the 5 cups coconut milk, ginger root, cinammon sticks, and salt. (En una cacerola, ponga a hervir 5 tazas de leche de coco, el gengibre, la canela y la sal.)
3) Add rice and and let it cook at low heat. (Agregue el arroz y cueza a fuego lento.)
4) When a little liquid have evaporated, add sugar and raisins and the remaining cup of cocnut milk and finish cooking. (Cuando haya evaporado un poco de leche de coco, agregue la azucar y las pasas; agregue el restante de la leche de coco y termine de cocinar.)
5) Serve in a big plate and garnish with grated edam cheese on top.(Sirva en un plato grande y adorne con queso de bola rallado por encima.)
