Tom's Stir-Fry Orange/Maple Chicken

Ingredients
6 oz chicken breasts cut into bite-sized chunks1/2 cooking onion, cut into chunks1/2 large red pepper, slivered2 celery stalks, cut into chunks1 tbsp cajun seasoningfresh ground black pepper3 garlic cloves, diced1 tbsp flour2 tbsp orange juice, unsweetened1 tbsp maple syrup1 tbsp grape seed oil
Directions
Prepare all vegetables and meat putting them in small bowls or dishes. Prepare the slurry by slowly adding orange juice to the flour and whisking until no lumps are seen then add the maple syrup and whisk again.
Heat pan, add oil and add chicken pieces stirring until part cooked and browned. Take the chicken out and put into warmed bow. Add onions, then garlice, celery and pepper stirring for a few minutes until starting to soften, put chicken back in the pan and keep stirring. Add the slurry for the last minute or so of cooking.
You can, if you wish, dice carrots and prepare green beans, add them to the pan for a few minutes before putting the chicken back in. We prefer to cook them seperately. This is nice served with brown rice.
