1 lb ground beef1 onion, one half finely chppoed, one half thinly sliced1 cup of corn chips1 large egg1 tablespoon of chili powder1 tablespoon of evoosalt and pepper278 ounce can of chopped tomatoes6 sandwich rolls, split halfway and toasted2 cups of shredded pepperjack cheese
1. in a large bowl, combine the ground beef, chopped onion, 3/4 crushed corn chips, the egg, chili powder, 3/4 teaspoon of salt and 1/4 cup water. shape into 1-inch balls
2. in a large saucepan, heat the evoo over medium heat. add sliced onion and cook until softened, about 3 minutes. stir in tomatoes and remaining crushed corn chips and bring to a boil. add the meat balls to the sauce cover and simmer until the meatballs are cooked through, about 20 min.
3. preheat broiler. using a slotted spoon spoon the meatballs and sauce into the toasted rolls, then top with cheese. broil until melted, about 2 minutes
