Chow Chow Pancakes

Ingredients
4 beaten egg whites1 cup finely shredded potatoes1 cup finely shredded zucchini1/2 cup finely shredded carrots1/4 cup finely chopped onion1/4 cup finely chopped red or green pepper3 Tbsp. Flour1 tsp. Mrs. Dash1/2 tsp. Poultry seasoningDash ground red pepperFew drops Worcestershire or Bragg's2 cups unsweetened applesauce2 tsp horseradish
Directions
Combine ingredients except applesauce and horseradish. Mix well.

For each pancake use 1/4 c. (scant) on a hot griddle. (Use contact grill.) Flatten to 1/4 inch. Cook 3 minutes on each side.

Single layer on baking sheet. Oven 250 F to keep warm until ready to serve.

Topping: Combine applesauce with 2 tsp. horseradish. Heat through.
