Moms Meatloaf

Ingredients

1 Tbsp. minced onions (I usually just use fresh onion - tastes better)1/2 C. milk1 1/2 lbs ground beef1 egg, slightly beaten1/2 C. quick-cook rolled oats (oatmeal)1/4 tsp. pepper1 C. (8 oz can) spaghetti sauce with mushrooms1 C. (8 oz can) kidney beans2 tsp. salt
If you use minced onion soak them in the milk for 5 minutes. Mix in ground beef, egg, rolled oats, salt, and pepper. Mound in 10 inch skillet (I usually just use a corning ware dish so I can bake it in the oven). I also sometimes add Ponzo Sauce or Worchestershire sauce in the mixture. I also add granulated garlic in the meat mixture.
Combine spaghetti sauce and kidney beans (with liquid). Pour over the meat mixture.
The recipe says to simmer uncovered 20 to 25 minutes or until done. I usually put in the oven at 350 or so and cook it until it looks done in the middle. I usually just poke a fork in it and pull the meat back to see if it is still red inside. Kind of like cooking a large hamburger.
