4 large potatoes, quartered & slices fairly thin4 large egges1/2 red onion. sliced2 cloves garlic (optional)canola oil for frying potatoes
"Boil" the potatoes, onion & garlic in the oil until soft (starting to change color on the edges). Whisk eggs. Drain & add hot potatoes to eggs. Coat thouroughly. Turn into a hot 9" (non stick) pan to which you've added a tsp of olive oil. Cook for a few minutes till set. Invert onto plate, slide back into pan & cook till done. Cut like a pie
