German Lentil Soup

Ingredients
3 slices bacon diced small 1.5 cup diced carrots1.5 cup diced celery1.5 cup diced onion1.5 cup diced leeks2 cups (l lb) lentils4 cups diced ham2 to 3 quarts water2 cups diced peeled tomatoes (canned or fresh)dash of oregano, thyme2 bay leaves
Directions
In large pot crisp bacon. Add carrots, celery, onions, and leeks, cook till limp. Add lentils, ham, water, tomatoes and spices. Bring to a boil, then simmer until lentils are tender, 1 1/2 hours to 2 hours. Makes 16 servings
