Crunchy Jicama Slaw

Ingredients
Dressing:1/2 cup lime juice2 TBS rice vinegar2 TBS ancho chile powder2 TBS honey1/2 cup canola/Enova oilsalt and pepperSlaw:2lb jicama, peeled and cut into matchsticks1/2 head napa cabbage, cored and shredded2 carrots coarsley grated1/4 cup chopped cilantro leaves
Directions
whisk together lime juice, vinegar, ancho powder, and honey. whisk in oil and season to taste with salt and pepper.
combine slaw ingredients (except cilantro) in a bowl, toss to mix. Pour dressing over, and then mix in cilantro. Let rest for 15 minutes, then serve.
