Blue Cornmeal Yeast Bread, homemade

Ingredients
1 Tbs. yeast1 C. warm water1/2 C. applesauce, unsweetened1 C. blue cornmeal3 C. whole wheat bread flour
Directions
Spray a loaf pan with nonstick spray.

Mix warm water and applesauce in a medium mixing bowl. Sprinkle yeast over the top. Allow to stand 5 minutes until yeast is foamy.

Mix in cornmeal and add flour slowly, mixing until mixture pulls away from the sides of the bowl.

Turn out onto a floured surface and knead 5-10 minutes, adding flour as needed, until dough is smooth and elastic and no longer sticky.

Shape into a loaf and place in prepared pan. Cover with a towel and put in a warm place to rise until double in bulk.

Bake at 350 degrees Fahrenheit for 45 minutes or until crust looks slightly golden.

Yields one 12 slice loaf.
