spanish rice

Ingredients
1 tbsp olive oil3 tbsp chopped onions1/2 jalapeño chopped (to tast)1/2 can tomato sauce3/4 c brown rice1 1/2 c water1/8 t chili powder (to taste)1/8 t cumin1/2 t salt (to taste)optional red or green bell peppers 1/4 c chopped
Directions
saute onion, olive oil and peppers until onions are translucent. Add rice, water, tomato sauce and spices. Bring to a boil. Reduce heat to simmer and cover tightly. Simmer for 45 minutes. DO NOT open lid or stir during cooking time. Makes 3 3/4 c. servings.

    It doesn't taste like regular spanish rice, but it was a great substitute. I especially like the jalapenos. It gave it that extra spice. - 10/21/08
