Crockpot Ropa Vieja

1 lb. flank steak1 T. vegetable oil1 small onion, sliced thin1/2 cup sofrito sauce1 can diced tomatoes (I prefer petite diced)1 tsp. cumin1 tsp. oregano1 tsp. diced jalapeno peppersSalt and pepper as needed
Brown the flank steak in a little vegetable oil on both sides for 3-4 minutes. Place in crockpot. Add remaining ingredients. Cook on low for 9-10 hours, or until meat is tender. When done, shred meat with two forks and allow to cook in the sauce for an additional 30 minutes. Serve as burrito filling or over rice.
