    1.5 lbs Lean Ground Beef
    1 pkg Reduced Sodium Taco seasoning
    1 can Red Kidney Beans
    6 cups Romaine Lettuce (shredded)
    4 cups Iceberg Lettuce (shredded)
    2 cups Mixed Field Greens (shredded)
    2 Large Tomatoes (chopped)
    1 cup Salsa
    1/4 cup Sour Cream
    1/2 cup shredded Tex Mex Cheese Mixture
    40 White Tortilla Chips


Brown and rinse ground beef. Add kidney beans, 1 cup of water and taco seasoning and cook according to package directions.
Toss lettuce, greens, tomatoes, and cheese in a large salad bowl.
Combine sour cream and salsa and toss into lettuce mixture.
Top with meat and bean mixture. Serve with crunched up chips.
Makes 6 servings.

    This was great! My pickiest kid even ate it. I'm definitely adding this to my regular rotation. My family ate it as the recipe stated, but since I'm trying to reduce I omitted the cheese and chips and used light sour cream...still very yummy! - 6/24/10
