Chris' Enchilada Cassarole

1 lb Chicken breast, pan fried in a little olive oil1 Taco Seasoning Mix Pack1/2 cup chopped white onion1 Bell pepper (red, green, yellow)1 can campbell cream soup1/5 Cup Chicken Broth1 Cup cheddar cheese10 Small corn tortillas1 Cup CornTasty Options1 small can sliced black olives1 small can diced green chilesgreen onion and sour cream for garnish
Dice chicken into 1" cubes, put in zip lock bag and add Taco seasoning to maranate the chicken.
Brown chicken in fry pan, add onion, pepper, and corn. Cook til chicken is no longer pink.
Mix the soup and chicken broth together, dip the tortillias one at a time and layer the bottom of pan a 9 x 13 pan with tortilllia.
Spoon a layer of the chicken mixture, then a layer of cheese. Repeat the layering until the chicken mixture is gone. Finisth the top with a layer of tortillias topped with cheese.
Cook for 30-35 min at 350.
