Almond Butter Protein Powder Oatmeal Cookies

Ingredients
Almond Butter (1/2 cup)Sugar Substitute for baking (1/2 cup)2 egg whitesvanilla protein powder (1 cup)Instant Oats (1&1/2 cup)maple syrup (1-2 tbsp)water (1/4 cup)cinnamon (1 tbsp)flour (as needed-about 0.2 cup)
Directions
Mix almond butter, sugar substitute and egg whites using an electric mixer. In another bowl, mix oats, cinnamon, and protein powder (I use a vanilla powder by Designs for Health where my husband works, but several types should work!). Add dry mixture to wet ingredients and mix. It will likely be dry, so add water as needed. You do not need to add water (it will be more like biscotti if you do not), but if you do, you will have more of a cake-like cookie. Add maple syrup and mix all together. You may need to add flour if the mixture is too runny and/or to make the batter rise a bit. Place on a greased cookie sheet and cook at 350 degrees for about 8 minutes (per batch). Cookies will be done when there brown along the bottom and outside ridge.
